We are teaming up with our local organic producers to provide the community a genuine farm to table experience. We are proud to be working with Izzi's Garden of Eastland and Restoration Fields of Ranger. Our goal is to procure the best quality product locally and craft them with our chef driven team to serve the community.

Our Bruschetta is made with our House Made Sourdough we call Fett'unta. Toasted in our 900° pizza oven and then rubbed with Garlic and Oil. Our traditional toppings are cold, fresh, and seasonal.
We prepare our dough fresh in house daily with 00 Flour, Filtered Water, Salt, and Yeast only. "No Fillers / Nothing Frozen / No B.S."
We cook in an American-made, Italian-style brick oven that we take up to 900° for that authentic Neapolitan-style pizza
Native to Naples, Italy - the birth place of modern day Pizza.
We also prepare our pasta's in house daily with 00 Flour, Egg, Salt, and Filtered Water only. "No Fillers / Nothing Frozen / No B.S."
The 3 pastas we make in house by hand are Spaghetti, Fettuccine, and Casarecce. Spaghetti are long thin round pasta, Fettuccine are flat thin pasta, and Casarecce are short scroll type pasta. We also make Celeriac Noodles which are from celery root, gluten free and vegan.
At Blue Duck we craft our House Wines locally on our vineyard in
Cross Plains, Tx. We've also hand selected different types of varietals to compliment our Italian Kitchen cuisine. We have a broad selection from deep dark reds, to sweet whites. We also carry a variety of Beers from domestic and local to imports.

We're currently working on infrastructure and development of the Italian Kitchen. Since delays and missed opportunities exist, we do not currently know our exact operational date.
The Winery is buddying up with a group of guys that call themselves Italian Kitchen. They'll be crafting food to pair with wines exclusive to the location. No real changes, just adding a kitchen.

We're adding into Blue Duck an Italian Kitchen which will focus on Bruschetta, Pizza, and Pastas. The food will be chef driven so weekly specials and chef originals will be on the menu. We aim to make most food preparations in house.
