At Blue Duck
Our Bruschetta is made with our House Made Sourdough we call Fett'unta. Toasted in our 900° pizza oven and then rubbed with Garlic and Oil. Our traditional toppings are cold, fresh, and seasonal.

We prepare our dough fresh in house daily with 00 Flour, Filtered Water, Salt, and Yeast only. "No Fillers / Nothing Frozen / No B.S."
We cook in an American-made, Italian-style brick oven that we take up to 900° for that authentic Neapolitan-style pizza
Native to Naples, Italy - the birth place of modern day Pizza.

We are proud to make our mozzarella in house. When hand crafted, fresh mozzarella becomes a soft, silky, full bodied cheese. We use our mozzarella in all our pizzas, bruschetta, and at the core of every meatball is our mozzarella.

We also prepare our pasta's in house daily with 00 Flour, Egg, Salt, and Filtered Water only. "No Fillers / Nothing Frozen / No B.S."
The 3 pastas we make in house by hand are Spaghetti, Fettuccine, and Cavatelli. Spaghetti are long thin round pasta, Fettuccine are flat thin pasta, and Cavatelli are short twisted type pasta.

We are working on hand picking specific wine varietals to pair with our foods. Beers both domestic and imports.

We are expanding our wine list to incorporate local vineyards within our area. We are slowly curating a wine list that will both be local and pair well with our foods.

We are now serving chicken! With much planning and prepping, our kitchen can produce chicken! Unfortunately the only way we have chicken is saute. So no chick parm (yet)

We're adding into Blue Duck an Italian Kitchen which will focus on Bruschetta, Pizza, and Pastas. The food will be chef driven so weekly specials and chef originals will be on the menu. We aim to make most food preparations in house.
